(This is good.) kale tabbouleh (bowl of green and red salad) / (drawings of ingredients) 2/3 cup bulgur, 1 shallot, very finely chopped, 2 t cumin, 1 1/4 t fine salt, 1/2 c olive oil, 2 big tomatoes, 1/2 cup mint leaves, 1/2 cup diced radish, can of garbanzo beans, ~5c chopped kale, the pepper grinder

1. Cook the bulgur however the package says / 2. Whisk together olive oil, cumin, salt, pepper, and shallot. / 3. Add cooked bulgur to dressing and let cool while you chop the veggies. / 4. Toss everything together and enjoy. / There are a handful of dishes in my regular rotation whose total, undeniable nutritiousness turns me briefly into a little bit of a fiend. / Carolyn saying: This has every single food group!
