(This is good.) pozole verde (tomatillo, cilantro leaf, onion) / (drawings of ingredients) 1 pound tomatillos, 2 lbs boneless, skinless chicken, 6 cups chicken broth, a big onion, 2 garlic cloves, 1 t salt, 1 T oregano, 3 jalapenos, bunch of cilantro, 2 cans white hominy (blue chicken saying "brk?"), lime, radish, avocado, & cabbage

1. Roughly chop the onion and garlic. Halve the jalapenos. Take out the seeds for a milder flavor. Husk and rinse the tomatillos, and cut big ones in half or quarters. 2. Place all this in a large pot. Cover with broth, and add chicken, oregano, and salt. Bring to a boil, then lower heat and simmer, partially covered, until chicken is very tender, about 40 minutes. / 3. Take out the chicken and set it on a plate to cool a bit. / 4. Use a slotted spoon to
transfer all the solids from the broth into a blender. Add enough of the cooking liquid to make it easy to blend, plus a big handful of cilantro (stems are ok!) Blend until smooth. / 5. Return the blended mixture to the pot. Shred the chicken, and add it to the soup, along with the hominy (drained and rinsed). Simmer to blend flavors, about 15 minutes.

[I believe the blending step to be the #1 worst part of making any soup. It's 100% worth it in this case.] 6. Serve with cilantro leaves, lime wedges, radish slices, shredded cabbage, diced avocado, and/or anything else that sounds good. / As you'd expect of a white lady(?) who's lived in Minneapolis for 23+ years, I first
learned about pozole at the Seward Co-op. It was on their hot bar a lot on days when I'd bring 2 preschoolers out for essential grocery shopping and dinner while Anders was traveling.

I couldn't get enough of the tangy tomatillo broth and sweet, chewy hominy. / This is the recipe I found online that most closely matches what the co-op makes. Is it "authentic"? I don't know. It's attributed to someone who calls herself "Isabel Eats." I like it a lot.
