nanaimo bars (This is good.)

(a square of a 3-layer treat, brown on the bottom and top, with a thick white layer in the middle) Nanaimo bars. This is good.

I'm sorry to break this to you, but Christmas is coming. / In Canada, a Nanaimo bar is a regular, everyday treat you can get at any bakery.

In the U.S., pretty much nobody has heard of them, but in my family they are a holiday treat. / It started with my mom's mom, but her written instructions were sparse, so there are various methods.

The main change I've made to my mom's version (above) is to double the 2nd (frosting) layer. You are welcome.

Melt/stir in double boiler: 1 stick butter, 1/4 c sugar, 1 t vanilla, 1 egg, 2 c fine graham cracker crumbs [= 14 big rectangles], 1/2 c chopped walnuts, 1/3 c cocoa, 1 c coconut

WISDOM of the ages: - so much can go wrong! / - chill each layer really well before adding the next / - line the pan with parchment to make it easier to take out and cut up / - Use an 8 x 10 pan if you can. Or 8 x 8. / The double boiler is for real. Don't cook the egg.
